This vintage cuvée is made in the traditional methods of the French Champagnes.
The grapes were harvested in early September in the wee hours of the morning from our northern most chardonnay block for optimal freshness for a crisp, dry bubbly. After fermentation and finishing the cuvee was bottled in May of 2010. Fermentation in the bottle completed and it lay “en tirage” until being disgorged 48 months later.
Crisp and yeasty with hints of citrus, a great pairing for rich, creamy foods. Break out the crab or grilled salmon with hollandaise would be just fine.
